Primeiro, deve ser introduzida a carne\/gordura e depois os aditivos espec\u00edficos.<\/p><p style=\"text-align: left;\"><strong>Descanso da Massa:<\/strong><\/p><p style=\"text-align: left;\">Terminada essa etapa, mantenha a massa em refrigera\u00e7\u00e3o por 12-24 horas (geralmente a -4 graus Celsius). O objetivo desta fase \u00e9 facilitar a fermenta\u00e7\u00e3o subsequente por microrganismos.<\/p><p style=\"text-align: left;\"><strong>Enchimento:<\/strong><\/p><p style=\"text-align: left;\">Ensacar a massa preparada em um envolt\u00f3rio de col\u00e1geno adequada NDX F o Natur F Calibre 22 da Viscofan, amarrando as duas extremidades para pendurar a Chistorra, que deve formar uma lingui\u00e7a de apar\u00eancia longa (em torno de 30 cm ou maiores) e fina.<\/p><p style=\"text-align: left;\"><strong>Fermenta\u00e7\u00e3o:<\/strong><\/p><p style=\"text-align: left;\">Antes da secagem, aquecer levemente at\u00e9 aproximadamente 25 \u00b0 C e umidade relativa mais alta (&gt; 95%) por aproximadamente 24 horas para iniciar o processo de fermenta\u00e7\u00e3o. No fim do processo ser\u00e1 atingido um pH em torno de 5,5 as vezes pode descer ate 5,2.<\/p><p style=\"text-align: left;\"><strong>Secagem:<\/strong><\/p><p style=\"text-align: left;\">Mantenha o produto em \u00e1rea seca (com temperatura aproximada de 12 a 15 graus Celsius e umidade entre 75-80%) por aproximadamente 3 dias, onde pode se esperar uma perda de peso em torno de 20-25%.
